Pork & Cabbage Soup

Ingredients:

  • 1 tsp butter
  • 1  onion, diced
  • Kosher salt
  • 1 pd ground pork or pork roast, shredded
  • 1 oz fresh shiitake mushrooms or 2 oz dried wild mushrooms
  • 2 garlic cloves, minced
  • 6 cups chicken stock
  • 1 head Green cabbage 
  • 2 large carrots, peeled and sliced into coins
  • 1 large russet potato, peeled and cut into 1-inch cubes
  • Freshly ground black pepper
  • 3 green onions, thinly sliced

Directions:

  1. Sauté onions, stirring occasionally, until softened (~3 minutes).
  2. Add the pork.
  3. Stir in mushrooms and add a dash of salt.
  4. Cook until tender (~5-7 minutes).
  5. Stir in garlic and cook ~30 seconds.
  6. Add broth and increase heat to high. Bring to a boil.
  7. Stir in the cabbage, carrots and potato, and bring back to a boil. Cabbage will cook down.
