Chipotle Chickpea Tacos

Ingredients:

  • 2 tbs olive oil
  • 32 oz chickpeas, 2 cans, drained and rinsed
  • 2 tbs coconut aminos 
  • 2 tsp chipotle chili powder
  • 2 tsp garlic powder
  • 1/4 cup Cilantro 
  • 4 Green Onions
  • Guacamole 1 pint pre-made
  • Tortillas, to serve
  • 1 lb Ground Turkey (optional for protein)

Directions:

  1. Heat olive oil in pan over medium heat.
  2. When oil begins to shimmer, add the chickpeas – cook until light brown, stirring occasionally.
  3. Add coconut aminos, chipotle chili powder, and garlic powder – sauté ~3-4 minutes 
  4. Serve on warm tortillas with desired taco toppings.
