Ingredients:
- 1 tsp butter
- 1 onion, diced
- Kosher salt
- 1 pd ground pork or pork roast, shredded
- 1 oz fresh shiitake mushrooms or 2 oz dried wild mushrooms
- 2 garlic cloves, minced
- 6 cups chicken stock
- 1 head Green cabbage
- 2 large carrots, peeled and sliced into coins
- 1 large russet potato, peeled and cut into 1-inch cubes
- Freshly ground black pepper
- 3 green onions, thinly sliced
Directions:
- Sauté onions, stirring occasionally, until softened (~3 minutes).
- Add the pork.
- Stir in mushrooms and add a dash of salt.
- Cook until tender (~5-7 minutes).
- Stir in garlic and cook ~30 seconds.
- Add broth and increase heat to high. Bring to a boil.
- Stir in the cabbage, carrots and potato, and bring back to a boil. Cabbage will cook down.
