Whole30 Ratatouille

RatatouilleIngredients

  • Grass-Fed Ground Beef – 1 lb
  • Olive Oil – 1 Tbsp
  • 1 Yellow Onion, halved and thinly sliced
  • 4 Garlic Cloves, peeled and thinly sliced
  • 1 Small Eggplant, cut into 1/2-inch pieces (3 cups)
  • 1 Small Zucchini, cut into small cubes
  • 1 Red Bell Pepper, cut into slivers
  • 4 Plum Tomatoes, coarsely chopped (1-1/4 cups)
  • Sea Salt – 1 tsp
  • Dried Basil – 2 tsp
  • 8 oz Tomato Sauce, can
  • Fresh Ground Black Pepper, to taste
  • Grass-fed Mozzarella (optional)

Instructions

  1. Heat Olive Oil over medium heat in a large skillet .
  2. Add ground beef, onion, and garlic – cook and brown the beef and the onions have softened (8-10 minutes).
  3. Add eggplant – cook, stirring occasionally, (~8 minutes or until soft)
  4. Add zucchini, bell pepper, tomatoes, salt, and basil – cook over medium heat, stirring occasionally, (10-15 minutes or until veggies are tender).
  5. Stir in the tomato sauce and add black pepper to taste.
  6. Serve hot. If not paleo add a pinch of grass-fed mozzarella to top off.
