Paleo Taco Soup

Ingredients:

Paleo Taco Soup

  • 2 lbs. ground beef
  • 1 zucchini, diced
  • 1 red onion, diced
  • 2 bell peppers, diced
  • 1 jalapeño, minced
  • 2 cup tomatoes, diced
  • 2 garlic cloves, minced
  • 2 tbsp. chili powder
  • 2 tbsp. chipotle chili powder
  • 2 tbsp. ground cumin
  • 1 tsp. paprika
  • 1 cup tomato sauce
  • 4 cups beef stock
  • 1 tbsp. cooking fat
  • Fresh cilantro (to garnish)
  • 1 avocado, sliced (optional)
  • Sea salt and freshly ground pepper

Directions:

  1. Heat cooking fat in large saucepan – medium-high heat.
  2. Add garlic and onion – cook ~3 minutes.
  3. Add ground beef,  brown ~ 5 minutes
  4. Add chili powder, chipotle chili powder, cumin, paprika.
  5. Season with sea salt and ground pepper – mix well.
  6. Add zucchini, bell pepper, tomatoes, and jalapeño.
  7. Add tomato sauce and beef stock – stir.
  8. Cover and simmer ~25 minutes.
  9. Adjust seasoning, and serve with fresh cilantro and sliced avocado.
