Mediterranean Salmon Pasta

Ingredients
- 2 cups Whole Wheat Penne Pasta uncooked
- 2 cups Broccoli florets
- 1 tbsp Olive Oil
- 1 lb Salmon sliced
- 8 oz Mushrooms sliced
- 2 cloves Garlic finely chopped
- 2 Green Onions medium, sliced
- 8.5 oz Sun Dried Tomatoes sliced
- ¼ cup Basil leaves fresh, chopped
- 4 tsp Corn Starch
- 1 cup Chicken Broth
- ½ cup Feta Cheese crumbled
Instructions
- Cook Penne pasta without salt as directed. Add Broccoli the last 3 minutes. Drain.
- Heat skillet with Olive oil medium. Add Salmon, sauté and stir – 4 min. or until tender. Remove from skillet.
- Increase heat to medium-high. Add Mushrooms and Garlic for 2 minutes.
- Stir in Sun Dried Tomatoes, Green Onions and Basil. Stir 1 minute.
- In a 2 cup measuring cup mix Corn Starch and Chicken Broth until smooth. Add to vegetables in skillet. Stir for 1-2 minutes until thick.
- Stir in past mixture and salmon, cook and stir until heated.
- Sprinkle feta cheese and serve.
